Sunny Sundays call for Savory Salads! This ChickenSalad with quinoa, spinach, artichokes, chickpeas and bits of dried mangoes will keep you fueled for all those outdoor activities! Stay cool out there!
Ingredients:
(1 ) chicken breast (cubed)
(2) cups of spinach
(1/2) cup of quinoa
(1/2) cup of marinated artichokes
(1/4) cup chickpeas
(1) slice of dried mango
Salt and pepper to taste
Makes 2 servings
Directions:
Cube the chicken and pan grill. Add the cooked quinoa to pan and mix. Meanwhile add spinach to bowl and toss in artichokes and mix. Remove chicken and quinoa from heat and add spinach and artichokes to warm pan and mix with chicken and quinoa. Season with himalayan salt and pepper and top with chickpeas and chopped dry mango and plate.
Optional : add crushed red pepper to chicken and quinoa for an extra kick!
