I love a good Apple Crisp! So homey and yummy. Try this easy recipe on a night when you just want to stay in and cuddle.
Ingredients for Crisp Topping:
(1/4 cup) almond flour
(1/4 cup) gluten free old fashioned oats
(1/4 cup) brown sugar
(1/4 tsp) baking powder
(1/4 tsp) cinnamon
(1/8 tsp) himalayan salt
(2 Tbsp) coconut oil
Ingredients for Filling:
(2) medium or large Granny Smith or Gala apples, peeled and sliced thin
(1 Tbsp) coconut oil, melted
(1 Tbsp) flour
(1 Tbsp) lemon juice
(2 Tbsp) organic almond milk
(1/4 tsp) vanilla bourbon extract
(3 Tbsp) brown sugar
(1/2 tsp) ground cinnamon
(1/8 tsp) himalayan salt
Directions:
- Preheat oven to 375 degrees F.
- In a medium bowl, combine the crumb topping ingredients with a fork it resembles small crumbs. Refrigerate while you prepare the apple filling.
- For the filling, combine melted coconut oil and almond flour until well blended. Add lemon juice, organic almond milk and vanilla bourbon extract and stir well. Stir in brown sugar, cinnamon, and salt. Put sliced apples in a resealable bag bag and toss to coat. Pour apple mixture into an 6×6-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples. Bake for 30-35 minutes or until golden brown and top is set. Remove from oven and allow to cool for at least 10 minutes before serving.
**Optional – Serve with coconut whipped cream (just 2 ingredients!)
Makes 4 servings
